New standard for shawarma stations across UAE

  DUBAI - A UAE authority has issued new standards for restaurants, shops and cafes selling the UAE's popular sandwich. Shawarma stations across the UAE will now have to follow new standards issued by the Emirates Authority for Standardisation and Metrology (Esma). Esma on Saturday announced that it was enforcing new federal standards that would tighten controls over how the popular food is served. The new rules include: 1. Proper storage of ingredients 2. Segregation of meat and vegetables to avoid cross-contamination 3. Keeping shawarma machine inside the food outlet 4. Meat must be slaughtered in approved slaughterhouse 5. Product should be Sharia-compliant 6. Roasting and selling shawarma should be done inside the shop 7. People preparing the shawarma should be free from infectious diseases, respiratory diseases, wounds and ulcers 8. Cook should adhere to the rules of hygiene, including washing hands with soap and water 9. Outlets should have sufficient space to store necessary equipment 10.
